You will definitely learn a lot by doing this and get the feel of their approach. One can just observe intensely at a beautiful old master drawing and also learn something, but if you actually go ahead and copy it, you will be surprised how much more knowledge will be introduced to you, as you will also realize why they did things, why they made certain marks like that, etc. But you will never know those things by just watching or admiring the piece.

It is also a great idea to keep a sketchbook wherever you go, and just sketch the people you see around you. This is one of the best way to learn how to draw people. The more you draw the faster you will improve. It eventually just comes down to mileage. Practice, practice, practice.
